Our meat is prepared in-house in small batches, and selection varies daily.

Planning ahead? We order from local farmers on Sunday for delivery Wednesday or Thursday. For special occasions or large quantities, let us know about a week in advance so we can source what you need and have it ready for pickup.

Fresh Meats

We offer a full range of fresh beef, pork, lamb, and poultry. Most cuts are prepared to order, and we are happy to work with you on special requests.

Housemade Sausages

We make a wide variety of sausages in-house, including traditional European styles, international and regional specialties, smoked and cooked sausages.

Charcuterie &  Cured Meats

Charcuterie is a central focus of our work. We produce a wide range of cured, cooked, and fermented meats using traditional methods drawn from European and other international traditions. Our offerings include jerky, salumi, pâtés, terrines, confit, and other specialty preparations.

Prepared Foods

We offer a small selection of house-prepared items designed to make cooking easier at home, such as ragù Bolognese, all-beef chili, gluten-free meatloaf, and taco meat.

Cheese & Dairy

We carry a curated selection of cheeses, eggs, butters, and other dairy products from small producers we trust. Our focus is on quality, craftsmanship, and thoughtful sourcing. Some dairy items are available by pre-order only. Please ask for details.

Smoked, Cooked & Ready-to-Eat Meats

We carry a rotating selection of smoked, cured, and fully cooked meats, as well as lox and alder wood–smoked salmon. These items are prepared in-house or sourced from trusted producers.

Stocks, Broths & Cooking Fats

We prepare a rotating selection of stocks and broths, including our popular beef bone broth, along with chicken, turkey, and pork stocks. We also regularly offer veal demi-glace and duck fat for building deep, rich flavor into your everyday cooking.

Dips, Spread & Pantry Items

We partner with small Chicagoland producers such as Old Arthur's and Green Cuisine to bring you an assortment of dips, spreads, and sauces selected to pair well with our meats.
